Whole dried elderberries (Sambucus nigra) are rich in natural pigments called anthocyanins, which act as antioxidants and give the berries their deep purple color.  Naturally tart and fruity, elderberries are often enjoyed in teas, syrups, and culinary recipes, especially during cooler months.
